Cooking potatoes and the different varieties

4. Set up with water for crumbly potatoes
Cooking floury potatoes requires a bit more attention. A floury potato is a bit more brittle in structure and falls apart a bit easier after cooking. Examples of floury potatoes are the varieties Bildtstar, Bintje, Doré, Mozart, Rode Pipo and Santé. Drain them just before they are done and leave them to cook and evaporate, with the lid at an angle to the pan, on a flame burner or hot plate. Shake up crumbly potatoes well before serving to make them even more crumbly. If you boil crumbly potatoes for too long, they will increasingly fall apart and become mushy.
When you want to make mashed potatoes, a soufflé, a tasty stew or a binder for soup, extra crumbly potatoes are best suited. These fall apart completely after cooking, so they can only have a soft preparation.
4. Set up with water for very crumbly potatoes
Cooking extra floury potatoes (also called decoction potatoes) is a delicate job. Very floury potatoes like an Irene and Eigenheimer are better served by steaming in inch-high water. Otherwise, you end up with a mashed potato instead of a cooked potato. This type of potato, like crumbly potatoes, you boil half under water. Crumbly potatoes only need to boil gently for 10 minutes and no longer.
Then drain them and let the decoctions (i.e. the potatoes) rest for another 10 minutes, covered with a clean tea towel and off the heat in the pan. All you have to do now is shake the pan to get the potatoes to crumble. Now they are ready to use in your stew or stew pot!
