The pH value and health

The pH is a measure of the acidity (aka acidity) of an aqueous solution. The pH of a neutral aqueous solution is around 7 at room temperature. Acidic solutions have a pH lower than 7, and thus a high acidity or are Acidic in the English language. Basic solutions have a pH higher than 7 and thus a low acidity and are Alkaline in English. Many believe that fruit and fruit juices are considered alkaline because of their average PRAL of -3.1, with dried fruit being by far the most alkaline. This is because the cations or positively charged ions are high in all alkaline foods and are more concentrated in dried fruit due to the loss of water during the drying process. Fresh apricots, for example, have a PRAL of -4.3, while dried apricots are the most alkaline of all dried fruits, with a score of -33. Dried bananas are also a good option, with a PRAL of almost -30.

Parsley and Dill

Herbs are not only great for adding flavour to any dish, but according to the US Department of Agriculture, herbs are one of the most alkaline foods you can eat. As a food category, are fresh and dried herbs more alkaline than any other group, with an average PRAL of -8.2. Parsley is particularly rich in alkaline compounds: freeze-dried parsley has a PRAL score of -108. Dried dill has a -75 PRAL. 

4 Taking mineral supplements

The figure below, taken from Dr Lynda Frassetto's research, shows that the decline in bicarbonate buffers starts around the average age of 40. At this age, many acidic wastes also accumulate. At age 90, the decrease in bicarbonates in our blood is 18%.

For this reason, it is wise to pay attention to this aspect from the age of 40, as shown in the chart. I prefer consuming fruits, vegetables and enough water to achieve this. Drinking Alkaline Ionised water and eating fruit and vegetables with good acidity allows the digestive system to work more efficiently and the body does not have to spend as much energy producing sodium carbonate. Labels are often good at hiding sugar. However, if you come across any of the following hidden names, you know it's sugar the manufacturer is trying to hide. Although agave syrup seems harmless, it is actually a fructose bomb. Fructose puts a lot of strain on the liver. It is better to leave out processed products and choose unprocessed, whole foods. The natural sugars in our diet are sufficient for our body to function. The brain in particular constantly needs some glucose.

8 Stopping wrong dyes, preservative number and e-numbers

Processed foods contain E-numbers: additives that provide, for example, longer shelf life, gloss, colour retention and prevention of flaking. Because of the bad reputation of E numbers, manufacturers often state the common name. The list of red and orange substances is endless, so it is useful to list only the green E-numbers.

The booklet is full of E-numbers which are coloured red and orange in terms of classification. It is more convenient to focus on the shorter list of the green e-numbers.

To avoid E621, it is essential to know the different names used to designate this flavour enhancer. E621 can be disguised under the following names: Monosodium glutamate, glutamate, glutamic acid, vegetable hydrogenated oils and fats, hydrogenated proteins, gelatine, calcium or sodium caseinate, added yeast, yeast extract, monopotassium glutamate and some corn oils.

Other names often used to hide E621 include: malt extracts for food purposes, broths, malt flavourings, artificial flavourings, natural flavourings, natural flavours of pig or chicken, spice extracts, wheat proteins, "other herbs or spices", maltodextrin, soy sauce, products fermented or enriched with proteins, citric acid (also concentrated), corn syrup and caramel flavouring (used for colour).

The following products may possibly contain E621: soy protein (including concentrated), soy protein isolate, wheat protein (including concentrated), carrageenan, enzymes, milk protein (sometimes enriched), and possibly even rice protein or oat protein.
